Plant meat, as a meat imitation with a flavor and texture similar to meat, began to become popular abroad in the 1960s. The main raw material of plant meat is soy isolated protein, peanut isolated protein, soy textured protein, etc. The state can simulate common meat products such as chicken nuggets and patties; peanut protein after processed will be more chewy.

According to the different water content of the final product, it can be divided into the following two categories:

1.Low-moisture extrusion process

The low-moisture extrusion process refers to the low-moisture fibrous protein products using soy protein concentrate and soybean meal as main raw materials, by pre-mixing different types of vegetable protein powders, then extruding, slicing, and drying , And form a stable structured product . The fibrous protein products are sold or stored as prefabricated raw materials for meat products. Through extrusion technology, TVP absorbed with water, the structure is similar to  meat-like products.

Typical applications of tissue protein include meat patties, chicken nuggets, hamburger cakes, sausages, meat sauces, minced meats and other fast food applications.

2.High-moisture extrusion process

High-moisture extruded protein products are also known as high-moisture extruded protein products. The moisture content is as high as 60-70%. The double-screw extrusion process is used to reorganize and align the protein to form a fibrous shape to obtain a stable structure, shape, color and texture can be used to simulate real meats, such as chicken, beef, pork or fish. Because of its high moisture content, it is not conducive to storage and requires refrigeration or frozen storage.

The pre-mixed ingredients are in accordance with the customized mature formula. During the extrusion process, water and other additives are mixed. Through the special cooling molding device in the extruder, the fiber structure is created during the extrusion process and the required fiber texture structure is stabilized. After the structure is stable, it can cooperate with the conveying and cutting equipment for deep processing of the product form.

Compared with the traditional meat production process, plant meat is more environmentally friendly, economical, cruel-free, energy-saving and safe.
